Tryout Jenny Cookies 2nd Attempt

Last week, I tried baking the Jenny cookies but failed.
So yesterday, I attempted the 2nd time to bake it.
I am taking my mum oven into good use because she bought it 2 years ago and its been lying there since.
I got G to bring the mixer to my house so I can do the mixing without using any strength.
This time, I used the President unsalted butter.

The cookies looks better but still not very successful.
I don't know why.
I guess, I'll need to learn it from Steph.




I brought some to Veron's to try since she's staying nearer to me.
She said its nice but I think its okay only.
When I tried the one that Steph bake, it was really addictive.
Still thinking its the problem with the butter!
I really need to find Golden Churn butter to try again.
Hope my 3rd attempt will be successful. :)

Tryout Jenny Cookies 1st Attempt (Failed)

My friend and I wanted to bake something for this month meet up.
So I suggested to bake Jenny Cookies which is very popular in HK.
I saw many copycat recipe online.
Steph has also made it for me to try and I really love it.
Therefore, we decided to bake it.

The recipe that we used is from Miss Tam Chiak: http://www.misstamchiak.com/recipe-ultimate-butter-cookies/

The ingredients that we used below.
Please note: DO NOT USE Pure Ghee butter.
We supposed to buy Golden Churn butter, but I looked everywhere for it and its out of stock.
Hence, we decided to buy Pure Ghee as a substitute.
However, Steph said the oil content is higher.
The mold is quite watery which explains why my cookies failed. :(

After baking, the shaped cookies melted and flatten.
The taste is okay but I still can taste the flour.

We tried making second using coarse sugar because Eng Sang said it might due to the icing sugar.
It turned out that using coarse sugar, made it worst.
Everything cannot even be eaten, so we threw everything away.

Anyway, coming weekend I'll try it at home with the help of G.
Hopefully, it will turn out well.
I am going to buy another type of butter if I still cannot find Golden Churn butter.
Will be back to tell you if I succeed or not. :D

No-Bake Strawberry Cheesecake

I chance upon this box of No Bake Strawberry Cheesecake at the Cold Storage few weeks ago.
Since I don't have an oven at my house, so no bake cheesecake is the best for now.
If I remember correct, this cost about $4.85.
I decided to make it today since my sis will be coming back home tomorrow.
Maybe my uncle and auntie will be here to try if they want.




Easy recipe.

The box consist of the Crust Mix, Filling Mix and the Strawberry Topping.

Mixed it with the crust mix, sugar and melted butter.

With the help of the boyfriend to help me whipped the filling mix and milk.
Then I spread it on top of the crust mix.
Chilled it in the fridge for an hour plus.

Add the strawberry topping and its good to eat.


Overall, mum said its tasty.
Boyfriend said that the bottom crust is not enough.
For me whom don't appreciate cheesecake, I find that its okay too.
However, I find that the crust fall apart easily not sure if its because the butter is not enough.
Still, I'm happy that its successful. :)

Bread Making Class #4

Last Saturday, my friends and I had our last bread making class at Chong Pang CC.
It was a great 4 lessons and I get to learn a lot about baking a bread.
The last day was quite slack I guess.

1. Sweet Bun
The teacher didn't give us the ingredient and procedure of making for this.
He just made the dough on his own and we helped to roll the dough.
Tasted it, it doesn't taste sweet at all..




2.Red Yeast Cranberries Bun

3. Longan Wolfberry Bun



Hopefully to join this kind of class again in future.
I want to learn to make hot dog bun, croissants and pastries.

Bread Making Class #3

I had my 3rd class of bread baking lesson.
And this time, our extra recipe is egg tarts.
When I posted that into my FB and Instagram, the egg tarts one got more likes. Haha~

1. Egg Tarts
2 separate mixture for egg tarts, one is the egg tarts pastry and the other one is the egg tart custard.
Easy to make, just that the pastry dough to stick to the cup is a little trouble to do.
Maybe its just me, no skill. :p

Anyway, this popular egg tarts that I gotten only Veron and my mum got to taste it. Lucky them. Hahaha..

I could see the custard was still "cooking".
We had to let me settle down before eating.

2. Astragalus Longan Roll
Our teacher soaked the dried longan with rum for this.
Well, I guess not many people would appreciate the taste of these.

My mum told me something funny.
Because I told her that this was made with rum, so she didn't want my dad to have it (since he's driving).
My dad was so unhappy, giving the buey song face, he told my grandma that my mum didn't want my dad to have it.
Ended up, my mum tasted it and find that its okay so she let him take to work. LOL!
Damn cute lah~




I'm always amazed by the outcome of the fermentation.


3. Longan Cookies
Using the same dried logan soaked with rum, we made these cookie.
I guess it taste better though I only tried one small bite.



Bonus for us.
The teacher made the bread on previous night for us to eat. :D
Left is the wholemeal bread and the left is Ham with garlic bread.


Next week, would be the last class.
Not sure what extra thing will we be learning.

Bread Making Class #2

Yesterday was the second lesson of the bread baking class.
We came in earlier and got the opportunity to make an extra bread that was not written in the "What we'll learn" list.
This time we also got more hands-on.
It was really warmhearted to see everyone playing a part in the baking session and the outcome was great. :)

1. French Loaf
I was quite surprised that the making of French Loaf is actually easy.
You also don't need many ingredient to make it.




Taste the same as the one that we buy outside. :D

2. Pine Nut and Roselle Bun

After mixing the ingredients and ferment the dough.

Then add the pine nut and roselle fillings.

Shaped it into a triangle majiam bao curry puff. LOL!


After ferment it again...

Add on cheese and pine nut on top.

The outcome after baking...

Looks so nice inside.. :D

3. Walnut Cookies
The most easiest thing to do is cookie, no need to ferment.
Just mixed all the ingredient, separate them into small batter pieces, glaze with egg and bake!



Tadah.. These one tasted really nice~

Looking forward to next week class whereby we will learnt extra recipe - Egg Tarts.
Even though I don't eat that, but the people around me loves eating egg tarts, so I guess if I could made for them, it would be very nice. ;)
